Copycat Chipotle Steak

A copycat of Chipotle's smoky grilled steak: sirloin marinated in a chipotle-adobo, garlic, lime, and cumin blend, then seared hot and chopped for bowls, tacos, and burritos.

Ingredients
  

For the Steak
  • 1.5 lb sirloin or flank steak
For the Marinade
  • 2 chipotle peppers in adobo plus 1 tbsp adobo sauce
  • 3 garlic cloves
  • 1 tbsp olive oil
  • 1 lime juiced
  • 1 tsp ground cumin
  • 1 tsp dried oregano Mexican oregano if available
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp water

Method
 

  1. Blend all the marinade ingredients into a smooth paste.
  2. Coat the steak in the marinade and refrigerate at least 2 hours, or overnight for deeper flavor.
  3. Heat a grill or cast-iron pan until very hot. Sear the steak 3–4 minutes per side, to an internal temperature of 145°F (63°C) for medium.
  4. Rest the steak 5 minutes, then chop into bite-size pieces against the grain.
  5. Serve in bowls, tacos, burritos, or salads.

Notes

The marinade can be made up to 3 days ahead. For less heat, use 1 chipotle pepper; for more, add cayenne. Store cooked steak up to 3 days in the fridge, or freeze up to 2 months.
