Seared Tuna Steak

Ingredients
  

  • 2 tuna steaks about 6 oz each, sushi-grade
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 2 tsp toasted sesame oil
  • 1 tsp fresh ginger, grated
  • 1 garlic clove, minced
  • 3 tbsp sesame seeds white and black
  • 1 tbsp olive oil for searing

Method
 

  1. Whisk the soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic. Pour half over the tuna and marinate 15 to 30 minutes. Reserve the rest for serving.
  2. Press the sesame seeds onto all sides of each tuna steak to form a crust.
  3. Heat the olive oil in a skillet over high heat until very hot.
  4. Sear the tuna for 1 to 2 minutes per side for a rare center, or longer for more doneness.
  5. Let rest 2 minutes, then slice against the grain and serve with the reserved sauce.

Notes

Use sushi-grade tuna if you like it rare in the center. Sear over very high heat for a perfect crust. Do not overcook, or the fish will dry out.
