Method
- Whisk the soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic. Pour half over the tuna and marinate 15 to 30 minutes. Reserve the rest for serving.
- Press the sesame seeds onto all sides of each tuna steak to form a crust.
- Heat the olive oil in a skillet over high heat until very hot.
- Sear the tuna for 1 to 2 minutes per side for a rare center, or longer for more doneness.
- Let rest 2 minutes, then slice against the grain and serve with the reserved sauce.
Notes
Use sushi-grade tuna if you like it rare in the center. Sear over very high heat for a perfect crust. Do not overcook, or the fish will dry out.
