Ingredients

For the ribs
  • 3 lb beef ribs back ribs or short ribs
  • 2 tbsp brown sugar
  • 1 tbsp paprika smoked or sweet
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1.5 tsp salt
  • 1 tsp black pepper
  • 1 cup barbecue sauce plus more for serving

Method

  1. Preheat the oven to 300 degrees F. Pat the beef ribs dry and remove the thin membrane from the back if present.
  2. Mix the brown sugar, paprika, garlic powder, onion powder, salt, and pepper, then rub it all over the ribs.
  3. Wrap the ribs tightly in foil, place on a baking sheet, and bake for 2.5 to 3 hours until fork-tender.
  4. Carefully open the foil, brush the ribs generously with barbecue sauce.
  5. Increase the heat to 425 degrees F and bake uncovered for 15 minutes until the sauce is caramelized. Rest 10 minutes before serving.

Notes

Low and slow is the secret to tender ribs. Back ribs are leaner; short ribs are meatier and richer. Remove the membrane for the most tender result.
