One-Pan Cajun Beef Smoked Sausage Pasta

A creamy, spicy one-pan dinner made with beef smoked sausage, Cajun seasoning, peppers, and pasta — all cooked in a single skillet in about 30 minutes.

Ingredients
  

  • 1 lb beef smoked sausage sliced into coins
  • 8 oz penne or rigatoni pasta
  • 1 tbsp olive oil
  • 1 onion diced
  • 1 bell pepper sliced
  • 3 garlic cloves minced
  • 1 tbsp Cajun seasoning to taste
  • 1 cup crushed tomatoes
  • 2 cups beef broth
  • ½ cup heavy cream
  • 2 tbsp fresh parsley chopped, to garnish

Method
 

  1. Heat the olive oil in a large skillet over medium-high. Brown the sliced beef smoked sausage on both sides, then remove and set aside.
  2. In the same skillet, saute the onion and bell pepper for 3–4 minutes, then add the garlic and Cajun seasoning and cook 1 minute.
  3. Stir in the crushed tomatoes and beef broth and bring to a simmer.
  4. Add the uncooked pasta, cover, and simmer 12–14 minutes, stirring occasionally, until the pasta is tender and the liquid has reduced.
  5. Stir in the heavy cream and return the sausage to the pan. Simmer 2–3 minutes until creamy. Garnish with parsley and serve.

Notes

Serve over rice instead of pasta for a Cajun sausage-and-rice version. For less heat, reduce the Cajun seasoning. Store leftovers up to 4 days in the fridge or freeze up to 3 months.
