Method
- Heat the olive oil in a large skillet over medium-high. Brown the sliced beef smoked sausage on both sides, then remove and set aside.
- In the same skillet, saute the onion and bell pepper for 3–4 minutes, then add the garlic and Cajun seasoning and cook 1 minute.
- Stir in the crushed tomatoes and beef broth and bring to a simmer.
- Add the uncooked pasta, cover, and simmer 12–14 minutes, stirring occasionally, until the pasta is tender and the liquid has reduced.
- Stir in the heavy cream and return the sausage to the pan. Simmer 2–3 minutes until creamy. Garnish with parsley and serve.
Notes
Serve over rice instead of pasta for a Cajun sausage-and-rice version. For less heat, reduce the Cajun seasoning. Store leftovers up to 4 days in the fridge or freeze up to 3 months.
