Homemade Hamburger Helper Beef Stroganoff

Ingredients
  

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced optional
  • 2 cups beef broth
  • 1 cup milk
  • 8 oz egg noodles about 3 cups
  • 1 tbsp Worcestershire-style sauce
  • 1 tsp paprika
  • 1 tsp onion powder
  • 0.5 tsp garlic powder
  • 0.5 cup sour cream
  • salt and pepper to taste

Method
 

  1. Brown the ground beef with the diced onion and garlic over medium-high heat until no longer pink and it reaches 160 degrees F. Drain excess fat.
  2. Stir in the sliced mushrooms and cook 3 to 4 minutes until softened.
  3. Add paprika, onion powder, garlic powder, Worcestershire-style sauce, salt, and pepper; stir 1 minute.
  4. Pour in the beef broth and milk and bring to a gentle simmer. Stir in the egg noodles.
  5. Cover and simmer 12 to 15 minutes, stirring often, until the noodles are tender and the sauce has thickened.
  6. Reduce the heat to low and stir in the sour cream until the sauce is creamy. Serve hot.

Notes

For a cream of mushroom soup version, replace the broth and milk with a can of cream of mushroom soup plus 1 cup of water. For potato stroganoff, swap the egg noodles for diced potatoes and simmer until tender.
