Ground Beef Bulgogi

A fast, weeknight take on Korean bulgogi made with ground beef in a sweet-savory soy, garlic, ginger, and sesame sauce. Ready in about 20 minutes and perfect over rice as a Korean beef bowl.

Ingredients
  

  • 1 lb ground beef
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 3 garlic cloves minced
  • 1 tsp fresh ginger grated
  • 1 tbsp sesame oil
  • ¼ tsp black pepper
  • ½ tsp gochujang or red pepper flakes optional, for heat
  • 2 green onions sliced
  • 1 tsp sesame seeds

Method
 

  1. Brown the ground beef in a skillet over medium-high heat, breaking it up as it cooks. Drain excess fat.
  2. Add the garlic and ginger and cook for 1 minute until fragrant.
  3. Stir in the soy sauce, brown sugar, sesame oil, black pepper, and gochujang. Simmer 3–4 minutes until the sauce thickens and glazes the beef.
  4. Stir in most of the green onions.
  5. Serve over rice and top with sesame seeds and the remaining green onions.

Notes

Make it a bowl: serve over rice with cucumber, shredded carrot, steamed broccoli, kimchi, or a fried egg. For low-carb, use cauliflower rice. Store up to 4 days in the fridge or freeze up to 3 months.
