- Heat the olive oil in a large skillet over medium heat. Add the onion and cook until soft, about 3 minutes, then add the garlic and cook 30 seconds more.
- Add the ground chicken and cook, breaking it up with a spoon, until no longer pink and lightly browned, 6 to 8 minutes.
- Stir in the soy sauce, tomato paste, paprika, and black pepper until well combined.
- Add the vegetables if using and cook until tender-crisp, 3 to 4 minutes.
- Make sure the ground chicken reaches 165 degrees F, then serve over rice, pasta, or in wraps.
Notes
This is a base recipe: swap in taco seasoning for tacos, Italian herbs for pasta, or a sesame-soy glaze for a stir-fry. Ground chicken breast is leaner; regular ground chicken stays juicier.
