Easy Ground Chicken Skillet

Ingredients
  

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 0.5 tsp black pepper
  • 2 cups mixed vegetables optional, such as bell pepper and peas

Method
 

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until soft, about 3 minutes, then add the garlic and cook 30 seconds more.
  2. Add the ground chicken and cook, breaking it up with a spoon, until no longer pink and lightly browned, 6 to 8 minutes.
  3. Stir in the soy sauce, tomato paste, paprika, and black pepper until well combined.
  4. Add the vegetables if using and cook until tender-crisp, 3 to 4 minutes.
  5. Make sure the ground chicken reaches 165 degrees F, then serve over rice, pasta, or in wraps.

Notes

This is a base recipe: swap in taco seasoning for tacos, Italian herbs for pasta, or a sesame-soy glaze for a stir-fry. Ground chicken breast is leaner; regular ground chicken stays juicier.
