Creamy Garlic Mushroom Salmon

Ingredients
  

  • 4 salmon fillets about 6 oz each
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 8 oz mushrooms sliced
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup parmesan cheese grated
  • 1 tsp dried thyme
  • 2 tbsp fresh parsley chopped
  • ½ lemon juiced

Method
 

  1. Season the salmon and sear in the olive oil for 4 to 5 minutes per side, until it reaches 145 degrees F and flakes. Remove and set aside.
  2. Melt the butter in the same pan and cook the mushrooms until golden, then add the garlic for 30 seconds.
  3. Stir in the heavy cream, parmesan, and thyme, and simmer until slightly thickened.
  4. Return the salmon, spoon the creamy mushroom sauce over the top, and finish with lemon and parsley.
  5. Serve hot over rice, pasta, or mashed potatoes.

Notes

Cook the salmon to 145 degrees F and brown the mushrooms well for the deepest flavor. Add a handful of spinach with the mushrooms for a salmon, mushroom, and spinach twist.
