- Set up three bowls: flour, beaten eggs, and breadcrumbs mixed with parmesan. Coat each chicken cutlet in flour, then egg, then the breadcrumb mixture.
- Fry the cutlets in hot oil 3-4 minutes per side until golden and cooked to 165°F. Drain on paper towels.
- Top each cutlet with marinara and mozzarella, then broil or cover 1-2 minutes until the cheese melts.
- Toast the rolls, add the chicken, spoon on extra sauce, and finish with fresh basil. Serve hot.
Notes
Baked version: bake the breaded cutlets at 425°F for about 20 minutes, or air-fry at 400°F for 12-14 minutes. Toasting the rolls keeps the sandwich from getting soggy.
