Chicken Parmesan Sandwich

A crispy breaded chicken cutlet topped with marinara and melted mozzarella, piled onto a toasted roll. The ultimate chicken parm sandwich, made at home.

Ingredients
  

  • 4 chicken cutlets or 2 breasts, halved
  • ½ cup all-purpose flour
  • 2 eggs beaten
  • 1 cup Italian breadcrumbs
  • ½ cup grated parmesan
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella
  • 4 sub or hoagie rolls
  • 0.5 cup oil for frying
  • 2 tbsp fresh basil to garnish

Method
 

  1. Set up three bowls: flour, beaten eggs, and breadcrumbs mixed with parmesan. Coat each chicken cutlet in flour, then egg, then the breadcrumb mixture.
  2. Fry the cutlets in hot oil 3-4 minutes per side until golden and cooked to 165°F. Drain on paper towels.
  3. Top each cutlet with marinara and mozzarella, then broil or cover 1-2 minutes until the cheese melts.
  4. Toast the rolls, add the chicken, spoon on extra sauce, and finish with fresh basil. Serve hot.

Notes

Baked version: bake the breaded cutlets at 425°F for about 20 minutes, or air-fry at 400°F for 12-14 minutes. Toasting the rolls keeps the sandwich from getting soggy.
