Ingredients

  • 1 lb ground beef
  • 3 packs ramen noodles seasoning packets discarded
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 0.33 cup low-sodium soy sauce
  • 3 tbsp brown sugar
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 2 cups broccoli florets
  • 3 green onions, sliced for serving
  • 1 tbsp sesame seeds for serving

Method

  1. Cook the ramen noodles in boiling water until just tender, about 3 minutes. Drain and set aside, discarding the seasoning packets.
  2. In a large skillet over medium-high heat, brown the ground beef until cooked through, about 5 minutes. Drain excess fat.
  3. Add the garlic and ginger and cook 30 seconds until fragrant. Stir in the broccoli and cook 2 to 3 minutes until bright and crisp-tender.
  4. Whisk the soy sauce, brown sugar, hoisin, and sesame oil, then pour over the beef and toss to coat.
  5. Add the drained noodles and toss until everything is glossy and well combined, 1 to 2 minutes.
  6. Top with green onions and sesame seeds and serve hot.

Notes

Swap broccoli for any quick-cooking veg (peppers, carrots, snap peas). For a spicy version add sriracha or chili flakes. Use ground turkey or thin-sliced steak instead of beef if you like. Leftovers keep 3 days in the fridge.
