Baked Crack Chicken Casserole

Ingredients
  

  • 2 lb boneless skinless chicken breasts, cubed
  • 8 oz cream cheese, softened
  • 0.5 cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • 1 packet (1 oz) ranch seasoning
  • 6 slices turkey bacon (or beef bacon), cooked and crumbled
  • 0.5 tsp garlic powder
  • 2 green onions, sliced (to garnish)

Method
 

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a bowl, mix the cream cheese, sour cream, ranch seasoning, garlic powder, half the cheddar, and half the bacon until combined.
  3. Fold in the cubed chicken until coated, then spread the mixture into the baking dish.
  4. Top with the remaining cheddar and bake for 30–35 minutes, until bubbly and the chicken reaches 165°F (74°C).
  5. Scatter the remaining bacon and the green onions over the top, and serve.

Notes

Use turkey or beef bacon to keep it pork-free. Rotisserie or leftover cooked chicken works too — just reduce the bake time to heat through. Serve over rice or potatoes, or keep it keto with cauliflower rice. Naturally low-carb at about 5g net carbs per serving.
